Blackberry, honey and cinnamon spread

Ingredients for 1 servings:

  • 500 g blackberries
  • 1 orange(s), zest and juice
  • 3 tbsp maple syrup or honey
  • 25 g vanilla sugar
  • 100 g gelling sugar 2:1
  • 5 g citric acid
  • ¼ tsp cinnamon powder
  • 50 ml liqueur (blackberry liqueur)

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 33 minutes

For 3 glasses of 220 ml each

Wash and clean the blackberries. Purée in a blender. Strain through a fine sieve into a saucepan—preferably with a spatula. Bring the blackberry puree to a boil. Rinse the orange with hot water and dry it. Zest and squeeze the juice and zest into the saucepan. Add the maple syrup or honey, vanilla sugar, and gelling sugar. Boil gently for about 4 minutes. Then add the citric acid, cinnamon, and blackberry liqueur and boil for another 4 minutes. Pour into clean, boiled jars. Makes 3 jars, each 220 ml.
