Blackberry – Merlot – Jelly

Ingredients for 4 servings:

  • 1 kg blackberries, fresh or frozen
  • 150 ml water
  • 4 cloves or just under 1/2 tsp clove powder
  • ½ tsp cinnamon, less if needed
  • 100 ml red wine (Merlot)
  • 1 pack of gelling sugar 1:1

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Place 1-2 kg of blackberries in a saucepan with 150 ml of water and simmer gently until the blackberries have largely broken down. Strain through a sieve until only the blackberry juice remains. Measure out 650 ml of the blackberry juice and add the Merlot, stir in the cloves and cinnamon, and mix everything together with the gelling sugar. Boil briskly for 4 minutes and then pour into the prepared jars, passing through a sieve if necessary to catch the cloves. Close the jars and leave the lids on for 5 minutes. In addition to being a spread, the jelly is also delicious slightly warmed with baked cheese or to flavor game sauces or red cabbage.
