Ingredients for 4 servings:

  • 600 ml blackcurrant juice
  • 100 g sugar
  • 1 tbsp jam (blackcurrant jelly)
  • ½ stalk(s) cinnamon
  • ¼ star anise
  • ½ tsp cardamom seeds
  • 2 cloves
  • 1 orange(s), untreated
  • 4 bulb(s)

Instructions

Working time approx. 30 minutes; Rest period approx. 1 day; Cooking/baking time approx. 30 minutes; Total time approx. 1 day 1 hour

as a side dish to game or with vanilla sauce as a dessert

Grate half the zest from the orange and squeeze out the juice. Bring this to a boil with the currant juice, sugar, currant jelly, cinnamon, star anise, crushed cardamom seeds, and cloves, and reduce by half. Peel and halve the pears, and remove the cores. Add the pear halves to the spiced broth, bring to a boil briefly, remove from the heat, and let them steep for a few hours, preferably overnight. It tastes delicious as a side dish with game, but also as a dessert with vanilla sauce or ice cream. The broth is ideal for red cabbage or game sauce.
