Blood orange marmalade with Campari

Ingredients for 1 servings:

  • 1 ¾ kg orange(s), (blood oranges)
  • 1 kg gelling sugar, 1:1
  • 100 ml Campari
  • 2 tbsp Grand Marnier

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Prepare 6 150 ml twist-off jars and set aside. Peel and segment the blood oranges, removing any pips and reserving the juice. Combine the oranges and juice with the Campari and Grand Marnier in a large saucepan. Add the gelling sugar. Bring to a boil over high heat, stirring constantly, and simmer for about 4-5 minutes. Immediately pour into the prepared jars and seal. Allow to cool thoroughly. Delicious on a breakfast roll or with quark for dessert. Keeps in the pantry for about 1 year.
