Braised cucumbers with sweet and sour minced meat

Ingredients for 4 servings:

  • 500 g minced meat
  • 150 ml water
  • 3 cucumbers or zucchini
  • 500 ml broth
  • 2 tbsp, leveled flour
  • 1 tbsp margarine
  • e.g. garlic powder
  • e.g. mustard, hot
  • n. B. vinegar
  • e.g. beet syrup or sugar
  • e.g. salt and pepper
  • 1 pinch of tomato paste
  • some parsley, chopped

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Cut the cucumbers or zucchini into bite-sized cubes. Brown the minced meat in a large pan with the margarine. Deglaze the pan three times with 50-70 ml of boiling water to loosen the browned meat. Add the diced cucumbers or zucchini. Dust with flour and stir in well. Top with vegetable stock, ensuring everything is well covered. Season to taste with garlic, mustard, vinegar, beetroot syrup or sugar, salt, and pepper. Cook for about 5 minutes, until the vegetables are soft. If you like, add a little tomato paste and sprinkle with chopped fresh parsley. Serve with boiled potatoes.
