Bread – cheese – skewers

Ingredients for 4 servings:

  • 500 g cheese, Provatura (or mozzarella)
  • salt and pepper
  • White bread, some slices of stale
  • 150 g butter, soft
  • 4 anchovy fillets
  • some milk

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Italian starter

Cut the cheese and bread into bite-sized cubes and season the cheese with salt and pepper. Alternate bread and cheese on the skewers and push them close together, with a piece of bread at each end. Lightly brush the skewers all over with a little butter and place them on a not-too-large, flat, rectangular dish. The ends of the skewers should rest on the edge without touching the bottom. Cook at approx. 200°C for 15 minutes until the cheese begins to run. Carefully turn them over once in a while and brush with a little more butter. Meanwhile, finely chop the anchovy fillets and, stirring occasionally, let them melt in the remaining butter over low heat. Add a little milk and mix the sauce well. Arrange the skewers on a (preheated) platter and pour the sauce over them.
