Ingredients for 2 servings:
- 4 bread dumplings
- 100 g diced ham or bacon
- 1 onion(s)
- 1 bulb(s) garlic
- 225 g Brussels sprouts
- 2 large eggs
- n. B. Salt
- n. B. Pfeffer
- e.g. Paprika powder, hot
- Pinch(s) of sugar
- tsp mustard
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
Cook the bread dumplings and Brussels sprouts. Meanwhile, add the ham cubes to a cold pan and fry slowly over medium heat. As soon as the ham has taken on some color, add the onion rings and finely chopped garlic. Then fry everything together over high heat. When everything is well browned, add a pinch of sugar. Beat the eggs in a bowl with a fork and season with salt, pepper, and paprika. I also added a little mustard afterward. As soon as the dumplings and Brussels sprouts are cooked, chop the dumplings into small pieces, or slices if you like. Add a splash of the Brussels sprouts’ cooking water to the pan and mix everything together. Finally, pour the egg mixture over the dumplings and continue frying, stirring occasionally, until the egg is set. Then season to taste with salt and pepper.
