Bread soup

Ingredients for 4 servings:

  • 1 onion(s)
  • 2 garlic cloves
  • 200 g stale bread (approx. 4 slices)
  • 3 tbsp butter
  • 1 ½ liters of meat broth or vegetable broth
  • Salt
  • pepper
  • ½ bunch chives

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

A dish from grandma’s time!

Peel and finely dice the onions and garlic cloves. Cut the bread into approximately 1 cm cubes. Wash and sort the chives, and cut them into small rolls. Melt 1 tablespoon of butter in a pan and sweat the onion and garlic cubes until translucent. Remove from the heat. Melt the remaining butter in a large saucepan. Add the bread cubes and brown well on all sides. Then add the onion and garlic cubes. Heat the meat or vegetable broth and carefully pour it over the bread cubes. Season with salt and pepper to taste, let it simmer for just a short time. Ladle the soup into bowls, sprinkle with chives, and serve immediately. Tip: Add the bread cubes to the broth just before serving, as they swell very quickly. If desired, place them in a preheated bowl so that everyone at the table can add as many bread cubes to their broth as they like.
