Bread: Spelled Bread
The perfect bread: spelled bread recipe with a picture and simple step-by-step instructions.
- 350 g Spelled flour
- 125 g Rye flour
- 125 g Applesauce
- 75 g Sourdough
- 10 g Salt
- 1 tsp Sugar
- 0,5 tsp Ground coriander
- 0,5 tsp Ground caraway
- 1 dice Yeast fresh
- 250 ml Lukewarm water
- Sift the flour into a bowl. Press a hollow. Crumble in the yeast and add some lukewarm water. Mix the ingredients carefully. Let rise for 5 minutes. Add salt, sugar, caraway seeds, coriander, applesauce, sourdough and work everything into a smooth dough. Cover the dough with a kitchen towel and let it rest in a warm place for 30 minutes.
- Knead the dough again, shape it into a ball and brush with water. Roll the dough ball in flour and let rise in a round bowl in a warm place for another 30 minutes until the dough has risen clearly.
- Preheat the oven to 220 degrees circulating air. Turn the dough ball out onto a baking sheet lined with baking paper and bake on the lowest rail. After about 10 minutes, reduce the temperature to 170 degrees and bake for another 35 minutes. Take out and let the bread cool on a rack.
