Brussels sprout and potato mash with onions and bacon strips

Ingredients for 2 servings:

  • 250 g Brussels sprouts (frozen or fresh)
  • 350 g potatoes
  • 40 g bacon, strips
  • 1 onion(s) (approx. 50 g)
  • 1 tbsp butter
  • cream
  • Salt and pepper, white
  • nutmeg

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

If using fresh Brussels sprouts, clean them, cut a cross into the stalk, and weigh them. Place them in a saucepan. Dice the peeled potatoes and add them to the sprouts with a little salt. Add enough cold water to the pan to cover. Cover, bring to a boil, and simmer for 20 minutes. Peel and dice the onion. Melt the butter in a pan, add the diced onion, and sauté over medium heat until browned. Season with a little pepper. Add the bacon strips and sauté. Remove the pan with the sprouts and potatoes from the heat and drain the cooking water. Return the pan to the heat and let everything cool briefly, then mash with a potato masher. Stir in the fried diced onion and bacon strips. Add enough cream and stir until the mash reaches the desired consistency. Season to taste and serve.
