Brussels sprout stew Lower Saxony style à la Gabi

Ingredients for 4 servings:

  • 500 g Brussels sprouts, chopped
  • 4 sausages (brain sausages)
  • 100 g carrot(s), peeled, sliced
  • 250 g potatoes, peeled and sliced
  • 1 leek(s), cut into rings
  • 200 g smoked bacon, streaky, sliced
  • 2 medium-sized onions, diced
  • 60 g lard
  • 1 ½ liters of meat broth, possibly instant
  • Salt and pepper, black, from the mill

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 10 minutes

Bring the meat broth to a boil and simmer the carrots, potatoes, leeks, and bacon for 15 minutes. Heat the lard in a pan and sauté the onions. Add the Brussels sprouts and onions to the broth, season with salt and pepper, and simmer over low heat for about 20 minutes. 10 minutes before the end of the cooking time, add the bran sausages and heat through.
