Ingredients for 1 servings:

  • 2 eggs
  • 2 cups sugar
  • 2 cups buttermilk
  • 4 cups flour
  • 1 ½ packets of baking powder
  • 1 cup sugar
  • 2 cups desiccated coconut
  • 1 cup of sweet cream

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Mug cake with coconut

Beat the eggs with sugar until frothy. Stir in the buttermilk and flour with baking powder. Spread the batter onto a baking sheet. Mix the sugar with the desiccated coconut and sprinkle over the batter. Bake at 170°C for about 20 minutes. Then spread a cup of whipped cream on the hot cake.
