Cabbage soup with beans

Ingredients for 4 servings:

  • 1 kg savoy cabbage
  • 4 small cans of beans (white giant beans)
  • 3 onions
  • 4 garlic cloves
  • 3 tbsp olive oil
  • 250 g smoked pork
  • 300 g potatoes
  • Salt and pepper, to taste

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cut the smoked pork into fine cubes or strips and fry in hot olive oil. Add the finely chopped onions and garlic and sauté until translucent. In the meantime, finely slice the savoy cabbage and add it to the pot. Season with salt and pepper and simmer for about 5 minutes over medium heat. Drain the beans in a sieve, removing about 1/4 and setting aside. Puree the remaining beans with a hand blender and add them to the pot. Top up with water, simmer for 5 minutes and season to taste. Now add the remaining beans and the diced potatoes, simmer for another 5 minutes and season with salt and pepper if desired. A very tasty stew in the cold season.
