Ingredients for 4 servings:
- 4 tbsp butter
- 1 large onion(s)
- 4 garlic cloves
- ½ tsp salt
- 1 tbsp chili powder
- 8 tbsp brown cane sugar
- 8 tbsp vinegar essence
- 8 tbsp Worcestershire sauce
- 4 tbsp soy sauce
- 2 tsp Tabasco
- 2 tsp mustard
- ½ liter tomato(s), pureed
- 8 steak(s) (minute steaks) of beef or pork
- Seasoning mix (Cajun seasoning mix)
- Oil or clarified butter
Instructions
Working time approx. 45 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 45 minutes
Season the minute steaks with the Cajun seasoning and sear in a hot pan with clarified butter or oil. Grease a casserole dish and place the steaks in it. Melt the butter in a saucepan. Peel and press the garlic. Peel the onions and slice them into rings. Sauté both in the butter until translucent. Mix the remaining ingredients well and add to the pot. Then simmer gently for 30 minutes until the sauce thickens. Pour the mixture over the steaks and marinate overnight. The next day, cover the casserole dish with aluminum foil and place it in a preheated oven at 180°C for about 45 minutes. After 45 minutes, remove the foil and roast for another 30 minutes. Baked potatoes and salad are delicious as side dishes. Note: In case you don’t know what Cajun means, the Cajuns are the descendants of 1,600 French “Acadians.” They originally settled in Canada, but were expelled by the British in 1785 and moved to Louisiana. Cajun cuisine is a rural and robust cuisine, just as the Cajuns settled not in the cities but in the swamplands of the Southern states.
