Canarian garlic chicken

Ingredients for 4 servings:

  • 6 garlic cloves, sliced
  • ¼ liter olive oil
  • 150 ml white wine
  • 1 chicken, cut into small pieces
  • pepper
  • Salt

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Rub the chicken pieces well with pepper and salt. Fry on all sides in a pan or roasting pan with half of the heated olive oil until golden brown. Transfer to a covered ovenproof casserole dish. Add the remaining olive oil to the pan and sauté the garlic slices until translucent. Deglaze with the white wine and pour over the chicken pieces. Place the dish, with the lid closed, in a preheated oven at 180°C – 200°C (convection oven) and braise for approximately 20 to 30 minutes. Remove the chicken pieces and serve with papas arrugadas (Canarian potatoes) and mojo sauce.
