Caramelized bananas with honey and mascarpone

Ingredients for 4 servings:

  • 3 egg yolks
  • 90 g honey
  • 250 g mascarpone
  • 80 g pine nuts
  • 4 bananas
  • 2 tbsp butter
  • 1 sprig(s) rosemary
  • 3 tbsp vanilla sugar
  • possibly rum

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Whisk the egg yolks and honey with a hand mixer until frothy. Combine with the mascarpone and mix until smooth. If it’s too sweet, season with a little lemon juice. Then chill. Place the pine nuts in an ovenproof pan and toast over medium heat until golden brown. Melt the butter in a pan and let it foam. Peel the bananas, add them to the pan with a little rosemary, sprinkle with the vanilla sugar, and let them caramelize slightly. If you like, add a splash of rum. If there isn’t enough liquid in the pan, add a little water. Serve with the honey mascarpone and garnish with rosemary.
