Caribbean ginger beer

Ingredients for 1 servings:

  • 250 g ginger, peeled
  • 2 limes
  • 1 kg sugar
  • 15 g yeast (dry yeast)
  • 15 g wine acid (pharmacy)
  • 4 ¾ liters of water

Instructions

Working time approx. 30 minutes; Rest period approx. 2 days; Total time approx. 2 days 30 minutes

great for Caribbean theme parties

Scrape the ginger roots into a large bowl. Thinly slice the limes and add them along with the tartaric acid and sugar. Reserve 200 ml of water, bring the remaining water to a boil, and pour it over the ginger mixture. While the brew cools slightly, heat the 200 ml water and whisk it with the yeast to form a paste. Stir into the ginger brew. Cover and let stand for 2 days. Then strain and bottle. The ginger beer will keep refrigerated for up to a week.
