Cassis – Balsamic

Ingredients for 1 servings:

  • 500 g black currants
  • 100 g sugar
  • 1 pinch of sea salt
  • 500 ml balsamic vinegar
  • 1 stalk(s) cinnamon
  • 5 carnations
  • 5 grains of allspice

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Very fine vinegar with a great fruity aroma, nice with autumn salads, well suited as a culinary gift

Wash the currants thoroughly and remove the stems (this is best done with a fork). Place them in a pot with sugar and salt and mash with a potato masher. Cover and let stand for about an hour. Add the balsamic vinegar and spices. Bring everything to a boil and simmer over very low heat for about 15 minutes. Strain the balsamic vinegar (either through a very fine sieve or through cheesecloth). Bottle.
