Cauliflower and orange salad

Ingredients for 4 servings:

  • 500 g cauliflower
  • 1 orange(s)
  • 2 tbsp balsamic vinegar
  • some salt
  • some pepper, from the mill
  • 1 tbsp olive oil
  • 50 g almonds, chopped

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 20 minutes

Divide the cauliflower into florets. Cook in salted water for about 10 minutes until al dente. Drain and let cool. Peel the orange and dice it, reserving the juice. Place the cauliflower and diced orange in a bowl. Mix the olive oil, balsamic vinegar, and the reserved orange juice, season with salt and pepper, and pour over the cauliflower. Toast the chopped almonds in a pan and add to the cauliflower. Mix everything together and let it marinate.
