Ingredients for 2 servings:
- 250 g celeriac
- ½ tbsp lemon juice
- Sea salt
- Sugar
- 3 tsp Dijon mustard
- 1 tbsp boiling water
- 50 ml olive oil
- 1 tbsp lemon juice
- Pepper, black from the mill
- Sea salt
- Parsley, some
Instructions

hearty salad with raw celery
Peel the celery and slice it into julienne strips. Mix with lemon juice, sugar, and salt, and let it simmer. Whisk the boiling water drop by drop into the mustard. Then stir in the olive oil drop by drop (like mayonnaise). Then stir in the lemon juice drop by drop. This should form a thick, smooth sauce. Mix the celery with the sauce and let it simmer for a while. Garnish with chopped parsley.
