Ingredients for 4 servings:
- 2 bunch spring onions
- 300 g tomatoes, small
- 2 tbsp butter
- 500 g Spätzle, pre-cooked (whole wheat if desired)
- 100 g ham, raw or salami, finely diced
- some sea salt with herbs
- pepper
- 150 g cheese, grated Emmental

Slice the spring onions into thin rings. Wash and quarter the tomatoes. Heat the butter in a pan over medium heat. Sauté the spaetzle for about 5 minutes, add the tomatoes, spring onions, and ham/salami. Season with salt and pepper and sauté for 1-2 minutes. Sprinkle the grated cheese over the top and let it melt. Serve immediately.
