Chia schnitzel baked

Ingredients for 2 servings:

  • 2 large turkey or pork schnitzels
  • 2 tsp, heaped Ajvar
  • 1 handful of spinach, fresh
  • 6 tsp chia seeds
  • 1 tomato(s)
  • 1 ball of mozzarella
  • 6 leaves of fresh basil
  • 2 leaves of garlic or 1/2 clove of garlic
  • some salt (Society Garlic Salt) or Himalayan salt
  • some pepper
  • some coconut oil or olive oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Preheat the oven to 200°C (top/bottom heat). Wash the schnitzels and pat them dry. Toast 4 teaspoons of chia seeds in a pan without fat for about 1 minute. Drain the mozzarella well and cut into 6 slices. Cut the basil and any garlic into strips, and the garlic into small pieces. Briefly blanch the spinach in a pan with a little water and let it drain. Cut the tomato into 4 slices. Fry the schnitzels in a pan with the oil. Season with salt and pepper after frying and place in a baking dish. Spread 1 teaspoon of ajvar on each schnitzel, distribute the chia seeds evenly, and top with the spinach. Sprinkle with the garlic, top with the tomato slices, and finally, the mozzarella slices. Bake in the hot oven for about 10 minutes. Remove from the oven and sprinkle with the basil and the remaining chia seeds. We had salad with it as a low-carb meal. Rice or potatoes would also work well. For a variation, replace the spinach with mushrooms and perhaps omit the ajvar.
