Chicken fritters with herbs

Ingredients for 3 servings:

  • 250 g chicken, cooked and finely chopped
  • 130 g ham, cooked, finely sliced
  • 500 g mashed potatoes, homemade or ready-made product
  • 2 eggs
  • 130 g breadcrumbs
  • salt and pepper
  • Oil for frying
  • some milk
  • 1 tbsp mixed herbs

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

In a bowl, combine the mashed potatoes with the ham, chicken, herbs, and one egg, and season to taste. Form the mixture into flat patties. Whisk the second egg with a little milk. Dip the patties in the egg-milk mixture, then coat them in the breadcrumbs. Fry in hot oil until golden brown.
