Ingredients for 4 servings:

  • 100 g dark chocolate, min. 70% cocoa or couverture
  • 300 ml apple juice
  • 500 ml milk
  • 2 tbsp almonds (almond butter)
  • 2 tbsp sugar
  • 125 g cream

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Roughly chop the chocolate (or couverture) (this works best on a large board with a heavy knife). Heat the apple juice in a double boiler, add the chopped chocolate, and melt while stirring constantly. Heat the milk in a saucepan, add the almond butter, and sweeten with sugar to taste. Stir this mixture into the apple-chocolate juice. Pour into cups or heatproof glasses. Whip the cream until stiff and use a piping bag to decorate the chocolate-apple juice with cream. Sprinkle with chocolate shavings.
