Chocolate Apple and Carrot Cake

Ingredients for 1 servings:

  • 100 g butter
  • 100 g chocolate
  • 6 egg yolks
  • 150 g sugar
  • 2 tbsp rum
  • 180 g hazelnuts, grated
  • 200 g flour
  • 2 tsp baking powder
  • 150 g carrot(s), grated
  • 150 g apples, grated
  • 6 egg whites
  • some powdered sugar for dusting or some chocolate icing

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes

Roughly chop the chocolate and melt it with the butter in a double boiler. Beat the egg yolks, sugar, and rum until very fluffy. Continue beating, then add the melted chocolate and butter. Combine the nuts, flour, and baking powder and fold in along with the grated carrots and apples. Beat the egg whites until stiff peaks form and then gently fold in. Pour the batter into a greased bundt pan. Bake in a preheated oven at 180°C for about 50 minutes. Once cooled, dust with powdered sugar or glaze with chocolate.
