Chocolate-banana-peanut pudding

Ingredients for 4 servings:

  • 500 ml milk
  • 1 tbsp, heaped peanut butter
  • 25 g cocoa powder
  • 2 egg yolks
  • 2 m.-sized banana(s)
  • 25 g cornstarch
  • 25 g sugar
  • 1 pinch of salt

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Whisk the cornstarch, egg yolk, salt, cocoa, and some of the milk in a bowl until thickened. Roughly chop the bananas and heat them in a small saucepan with the sugar and peanut butter. Once boiling, remove from the heat and pass through a food mill. Then add the cocoa and egg mixture to the banana milk and whisk vigorously. Bring the mixture to a boil over medium heat, stirring constantly, then reduce to low heat and simmer for at least 5 minutes, stirring continuously. Serve hot or chilled, as desired.
