Chocolate brownie muffins

Ingredients for 1 servings:

  • 90 g flour (whole grain)
  • 140 g flour (type 405)
  • 2 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • 2 tbsp cocoa powder
  • 100 g walnuts, chopped
  • 1 egg(s)
  • 120 g sugar
  • 80 ml vegetable oil (alternatively 125 g soft butter or margarine)
  • 1 tsp butter-vanilla flavoring
  • 250 ml buttermilk
  • 140 g chocolate coating (milk or dark)
  • 6 walnuts, 12 halves of which
  • Grease for the tray

Preheat the oven to 190°C (top/bottom heat) (170°C (fan oven)). Grease the muffin tin or use paper baking cups. In a medium-sized bowl, thoroughly mix the flour, baking powder, baking soda, cinnamon, cocoa powder, and chopped walnuts. In another bowl, break the egg and whisk lightly. Then add the sugar, oil or butter or margarine, vanilla extract, and buttermilk and mix well. Now add the dry ingredients from the other bowl and quickly fold in until just moistened. Do not overmix. Pour the batter into the greased muffin tin and bake for about 15-20 minutes. Remove from the oven and let the muffins rest in the tin for about 5 minutes. In the meantime, melt the chocolate coating in a hot water bath according to the package instructions. Dip the muffins in the chocolate coating, allow to dry slightly, and top with 1 walnut half.
