Chocolate mousse and pear cake according to Marlies' recipe

Ingredients for 1 servings:

  • 250 g dark chocolate coating
  • 4 eggs
  • 60 g powdered sugar
  • 500 ml soy milk (soy drink) , (vanilla soy drink)
  • 1 pack of pudding powder (vanilla pudding powder)
  • 200 ml whipped cream, lactose-free, optional
  • 1 can pear(s) (Williams Christ pears)
  • 1 pack of cake glaze, clear
  • 250 ml pear juice
  • 2 tbsp rum, or rum flavoring, optional
  • 1 cake base (sponge cake) homemade or bought

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Drain the pears and cut into slices/fans. Mix the pear juice with the glaze and bring to a boil while stirring. Add a little rum if desired (if children are eating this). Place a cake ring around the sponge cake and arrange the pears on the sponge cake. Pour the glaze over the pears and let cool. Mix the soy milk with the pudding mix and bring to a boil while stirring, then let cool. Break the chocolate coating into pieces and melt in a bain-marie. Separate the eggs. Beat the egg yolks with the icing sugar until frothy and fold in the chocolate coating. Beat the egg whites until stiff. Fold the pudding and egg whites into the chocolate mixture. Spread evenly over the pears. Chill the cake for about 30 minutes. Instead of the pudding, you can also use 200g of whipped cream. Whip the cream until stiff and fold it into the chocolate mixture along with the egg whites.
