Ingredients for 1 servings:

  • 280 g flour
  • 20 g cocoa powder, unsweetened
  • 1 tsp baking soda
  • 210 g sugar
  • 100 g butter (melted)
  • 1 large egg(s)
  • 270 g natural yogurt
  • 125 ml milk
  • ½ tsp vanilla extract
  • 80 g dark chocolate, chopped

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat the oven to 180°C, line a muffin tin with paper baking cups, and chop the chocolate. Sift the flour and cocoa powder into a bowl, add the baking soda and sugar, and whisk to combine. Briefly melt the butter in the microwave, set aside, and let cool slightly. In a second bowl, whisk the egg with the yogurt, milk, and vanilla extract, then finally stir in the butter. Now stir the flour mixture into the butter mixture; I just whisk it all together. Fill the prepared muffin tins 2/3 full with the batter. Spread the chopped chocolate evenly over the muffins. Bake in the preheated oven for about 15-20 minutes. Remove from the oven and let cool on a wire rack. If you like, lightly dust them with powdered sugar. This batter yields about 19 muffins.
