Chocolate pudding with compote

Ingredients for 3 servings:

  • 400 ml coconut milk, unsweetened (can)
  • 2 tsp cocoa powder
  • 100 ml grape juice, white
  • 2 packets of vanilla sugar
  • 1 pinch of salt
  • 50 g semolina (wholemeal semolina)
  • 2 oranges
  • ¼ liter orange juice
  • 2 tbsp sugar
  • 1 tsp cornstarch
  • some water

Working time approx. 30 minutes; Total time approx. 30 minutes

without milk and egg

Bring the coconut milk to a boil with cocoa powder, grape juice, vanilla sugar, and a pinch of salt. Gradually add the semolina while stirring. Bring everything to a boil, stirring constantly, and let it swell over low heat for about 5 minutes, stirring occasionally. Divide the mixture into dessert bowls and let cool. For the compote, peel the oranges, removing as much of the white pith as possible. Divide the flesh into segments. Halve or third the segments and remove the pips, reserving the juice. Bring 1/4 liter of orange juice and the reserved orange juice to a boil with 2 tablespoons of sugar. Mix the cornstarch with a little water and stir in. Bring the sauce back to a boil briefly. Add the oranges. Serve with the pudding.
