Ingredients for 1 servings:
- 150 g butter
- 1 pinch of salt
- 180 g brown sugar
- 1 tsp vanilla extract
- 1 pinch of cinnamon powder
- 3 tbsp baking cocoa
- 110 g oat flakes, fine
- 50 g desiccated coconut
- 3 tbsp espresso
- 50 g desiccated coconut for rolling
Instructions
Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 20 minutes
Grind the sugar, cocoa powder, and oats in a blender, but only briefly so the oats are finely ground. Combine the butter, vanilla, cinnamon, salt, desiccated coconut, and espresso with the oats in a bowl. Mix with a hand mixer. Refrigerate the dough for half an hour. Shape half a tablespoon of the mixture into balls with your hands. Then roll them in the desiccated coconut. Refrigerate the balls for half an hour (or better yet, overnight) before eating. But they taste just as good fresh.
