Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes
fine French pastry, makes about 40 – 50 pieces
Bring the water and butter to a boil in a saucepan. As soon as the mixture boils, remove the pan from the heat and quickly add the flour, salt, and baking powder. Stir everything vigorously with a wooden spoon until the dough pulls away from the sides of the pan and a homogeneous mixture forms. You’ve only stirred enough when the mixture no longer sticks to the spoon and sides of the pan. Let the mixture cool slightly. Using a hand mixer, add the sugar and the first egg to the mixture until everything comes together. Mix the second and third eggs into the mixture one after the other as described above. Place a piping bag into a container and fill the bag with the finished mixture. Pipe small 2-euro coin-sized blobs onto two baking sheets. Moisten your index finger with water and lightly press down the resulting ends. Sprinkle the chouquettes generously with sugar. Bake in the oven at 190°C (375°F) fan-assisted for approximately 20-25 minutes, keeping the oven door slightly ajar with a wooden spoon. Tip: The chouquettes are great for pre-baking and freezing. As needed, you can take the required amount out of the freezer and bake at 100°C (212°F) fan-assisted for approximately 10 minutes. They taste just like freshly baked.
