Ingredients for 8 servings:

  • 100 g powdered sugar
  • 20 g flour
  • 50 g ground almonds
  • 2 egg whites
  • 60 g butter

Mix the powdered sugar, flour, and almonds thoroughly. Then stir in the egg whites. Do not beat until stiff. Cream the butter in a saucepan and add it while hot to the egg white and sugar mixture. Mix well. Pour into baking molds. If you don’t have financiers’ pans, you can also use madeleine or muffin tins. Fill the muffin tins only about half full. Silicone baking molds are best; otherwise, the tins must be well greased. Bake in an oven preheated to 240°C for 5 minutes, then reduce the temperature to 200°C and bake for a further 10-12 minutes. This is a basic recipe. It can be expanded as desired. For example, you can use other nuts instead of almonds, or you can enrich the dough with raisins, chocolate chips, or brittle. The sky’s the limit.
