Christianboden – Fruit base without flour and sugar

Ingredients for 1 servings:

  • 3 eggs
  • 150 g oat bran
  • 120 g erythritol (sugar substitute)
  • ½ pack of cream of tartar baking powder
  • 125 g low-fat curd cheese

Instructions

Working time approx. 15 minutes; Rest time approx. 10 hours; Cooking/baking time approx. 25 minutes; Total time approx. 10 hours 40 minutes

Cake base substitute

Preheat the oven to 180°C (350°F) fan/convection oven. Line a 28cm baking pan with parchment paper. Separate the eggs, beat 3 egg whites until stiff peaks form. Beat 3 egg yolks with the erythritol until frothy. Add the oat bran to the egg yolk mixture, stir in the quark, and add the cream of tartar. Then fold in the beaten egg whites with a wooden spoon. Pour the batter into the baking pan and bake in the hot oven for about 20-25 minutes. Once cooled, you can top the base with fruit. I used fresh strawberries and also mixed the cake glaze with erythritol. I named it Christianboden because it’s based on Christian1977_S’s recipe for flourless bread. I highly recommend it.
