Christmas almond semolina pudding

Ingredients for 4 servings:

  • 375 ml milk
  • 150 g ground almonds
  • 80 g sugar
  • 2 packets of vanilla sugar
  • 60 g semolina
  • 100 ml whipped cream
  • 1 pinch of salt

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Bring the milk to a boil. Stir in the ground almonds, sugar, vanilla sugar, a pinch of salt, and the semolina. Bring to a boil in the milk while stirring. Turn off the heat and let it swell for 5 minutes, stirring continuously. Then let it cool. Whip the cream until stiff peaks form. Fold it into the cold almond cream. You can enjoy the semolina pudding warm right away or chill it in the refrigerator. It goes particularly well with hot berries or plum compote.
