Christmas apple cigars

Ingredients for 4 servings:

  • 400 g apples, preferably Boskop
  • 1 tbsp lemon juice
  • 40 g walnuts
  • 10 g butter
  • 25 g raisins
  • ½ pkt. vanilla sugar
  • 1 tsp cinnamon
  • 4 slices of puff pastry
  • 1 egg yolk
  • 1 tbsp milk
  • some honey
  • 4 scoops of ice cream, preferably walnut ice cream
  • some powdered sugar for dusting
  • 4 halved walnuts

Working time approx. 40 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 5 minutes

Wash and peel the apples, remove the cores, and cut the flesh into pieces. Drizzle the apple pieces with lemon juice. Roughly chop the walnuts. Melt the butter in a saucepan. Add the walnuts, raisins, diced apple, cinnamon, and vanilla sugar and sauté for 2-3 minutes over medium heat, stirring occasionally. Halve the puff pastry sheets, roll them out, and fill them with the mixture. Roll each sheet into a log. Whisk the egg yolk with the milk and brush the puff pastry with it. Place the logs on a baking sheet lined with baking paper and bake for 20-25 minutes at 180°C. Remove the apple cigars, arrange them on plates, and drizzle with honey. Place a scoop of walnut ice cream on the plates and sieve everything over with powdered sugar. Place half a walnut on each slice of ice cream and serve the apple cigars.
