- Beat the egg whites with the mixer (whisk) on the highest setting so stiff that a knife cut remains visible.
- Sift 2,250 g powdered sugar, gradually stir in, remove 2 well-heaped tablespoons of egg whites to coat the stars.
- Carefully stir the vanilla sugar, bitter almond flavor, cinnamon powder and half of the almonds under the rest of the egg whites on the lowest setting, knead in enough of the rest of the almonds that the dough hardly sticks, place it on a work surface dusted with powdered sugar for approx. 1 / Roll out 2 cm thick. ! The amount of almonds depends on the size of the eggs!
- Cut out the stars, place them on a baking sheet lined with baking paper, brush with the egg whites you left behind, the topping must be such that it can be smoothly spread over the stars, stir in a few drops of water.
- Put the baking sheet in the preheated oven and bake at 150 degrees for 20 to 30 minutes.
A notice:
- The cinnamon stars must still feel a little soft on the underside when they are removed.
