Ingredients for 1 servings:

  • 3 eggs
  • 125 g sugar
  • 1 pinch of cinnamon
  • 2 cl rum
  • 1 packet of vanilla sugar
  • 125 g fig(s)
  • 125 g candied lemon peel
  • 250 g sultanas
  • 125 g hazelnuts
  • 60 g almonds
  • 1 tsp baking powder
  • 2 tbsp cornstarch
  • 125 g flour
  • n. B. Almond(s) for decoration
  • e.g. candied cherry(s) for decoration

Chop the fruit and hazelnuts and place them in a bowl. Add the eggs, sugar, vanilla sugar, cinnamon, and rum, and beat until frothy. Mix the fruit and hazelnuts into the egg mixture. Then thoroughly mix in the flour sifted with baking powder and cornstarch. Pour everything into a greased loaf pan and decorate with almonds or candied cherries. Bake in a preheated oven at 150°C for about 80-90 minutes. The bread stays fresh and moist for a very long time. It also tastes delicious spread with butter. Baked in smaller loaf pans, it also makes an ideal gift. Tip: If you don’t like candied lemon peel, you can easily substitute it with candied pumpkin. The dried fruit can be varied according to taste (e.g. cranberries, apricots, dates, etc.).
