Christmas vanilla quark nut cake

Ingredients for 1 servings:

  • 400 g spiced speculatius
  • 120 g butter, melted
  • 500 g quark
  • 150 g sugar
  • 4 eggs
  • 1 packet of vanilla sugar
  • 1 packet of vanilla pudding powder
  • 100 ml milk
  • Vanilla pulp, ground
  • 150 g walnuts, chopped

Instructions

Working time approx. 20 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 35 minutes

for a 26cm springform pan

For the base, place the speculatius biscuits in a sturdy freezer bag and crumble them into small pieces. Knead the crumbs with the melted butter to form a dough. Pour the dough into a prepared 26cm springform pan, press it into the bottom, and chill for about 15 minutes. For the topping, separate the eggs and beat the egg whites until stiff peaks form. Beat the quark with the sugar, egg yolks, vanilla sugar, vanilla pudding powder, milk, and ground vanilla pod until creamy. Carefully fold in the beaten egg whites. Pour the quark mixture onto the base and bake in a preheated oven at 160°C (fan oven) for about 60 minutes on the middle rack. After 10 minutes of baking, scatter the chopped nuts over the cake.
