Ingredients for 4 servings:

  • 4 medium-sized onions, finely chopped
  • 3 tbsp olive oil
  • 1 green pepper, finely chopped
  • 4 eggs
  • salt and pepper
  • Paprika powder
  • Cayenne pepper
  • chili powder
  • 3 m.-large tomato(s)

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

African spicy egg dish

Sauté the onions in olive oil. Add the peppers and sauté them. Chop the tomatoes and season with salt, and add them as well. Crack the eggs and season with salt, pepper, paprika, cayenne pepper, and chili powder. Add the seasoned eggs to the vegetables, stir well, cook for another 2-3 minutes, and serve immediately. The eggs should still be semi-runny, like a fried egg that spills when cut.
