Ingredients for 12 servings:

  • 200 g flour, type 405
  • 50 g cornstarch
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 3 tsp cinnamon
  • 150 g walnuts, coarsely chopped
  • 1 egg(s)
  • 150 g butter, soft
  • 150 g yogurt
  • 120 g sugar

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat the oven to 180°C (160°C fan-assisted oven). Grease a muffin tin or line it with paper baking cups. Thoroughly combine the flour, cornstarch, baking powder, baking soda, cinnamon, and walnuts. Lightly whisk the egg in a large bowl. Stir in the butter, yogurt, and sugar. Add the flour mixture to the egg mixture and mix until the dry ingredients are moistened. Pour the batter into the tin or paper baking cups. Bake in the center of the oven for 20 to 25 minutes. Let the muffins rest in the baking tray for about 5 minutes, then remove and let cool.
