simply delicious

Combine the sugar, cornstarch, and potato starch (or rice flour) in a bowl and mix together. Then stir in the cocoa powder. Add a little of the cold milk to the mixture and whisk until smooth. Stir well with a whisk to avoid lumps. Pour the rest of the milk into a saucepan and add the sugar, cocoa powder, and starch mixture over medium heat. Stir constantly and heat gently until almost boiling, then allow to thicken. Add the chopped chocolate, stir with a spoon, and melt. You can also melt the chocolate in a double boiler beforehand. Do not overheat the mixture to prevent the chocolate from burning.
