Coconut muesli

Ingredients for 2 servings:

  • 1 tbsp desiccated coconut
  • 2 oranges
  • 1 large banana(s)
  • 1 tbsp lemon juice
  • 400 g whole milk yogurt
  • 2 tbsp muesli without added sugar

Instructions

Toast the desiccated coconut in a pan without fat, then remove. Peel the oranges thickly enough to remove the white pith. Cut out the segments between the membranes with a sharp knife, reserving the juice. Peel and slice the banana, then drizzle with lemon juice. Mix the orange segments and banana slices and divide them between two small bowls. Mix the yogurt with the muesli and the reserved orange juice and pour over the fruit. Sprinkle with the desiccated coconut to serve. At only 42 kcal per 100 g, oranges contain 50 mg of vitamin C, more than any other citrus fruit. Approx. 368 kcal per serving, 12 g fat, 12 g protein, 53 g carbohydrates, 7 g fiber.
