Very chocolatey, very simple, very delicious! Alcohol-free
Melt 150g of dark chocolate with 150g of butter in a hot water bath. Beat 6 eggs with 250g of sugar and a sachet of vanilla sugar until frothy. Add 75g of flour, 5 tsp of coffee powder, and the melted chocolate to the egg mixture. Pour the batter into a springform pan (approx. 26cm). Bake for 35-40 minutes at 180°C on the middle rack. Just before serving, sprinkle with powdered sugar and serve with freshly whipped cream. The original Polish recipe calls for quite a bit of alcohol, probably some kind of coffee liqueur. If you want the cake to taste a little more intensely of coffee, simply add a little more coffee. You can, of course, reduce the amount of sugar slightly; I made it today with 230g of sugar, and in the future I’ll experiment with how much you can reduce it. Don’t be put off by the runny batter; the batter will already be firm… A must for chocolate and coffee fans!
