Colorful mashed potatoes Italian style

Ingredients for 4 servings:

  • 800 g potatoes, floury
  • 125 ml vegetable broth, homemade or instant, hot
  • 4 tomatoes, dried, without oil
  • ½ tbsp capers, well drained, chopped if desired
  • 2 tbsp Parmesan, freshly grated
  • 1 tbsp olive oil
  • salt and pepper
  • ½ tsp oregano, dried
  • ½ tsp thyme, dried
  • e.g. fresh basil for garnishing

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Peel the potatoes, cut into chunks, and cook in salted water for about 15 minutes until soft. Drain the cooking water and mash the potatoes thoroughly with a masher. Gradually stir in enough hot stock with a wooden spoon to form a creamy mash. Chop the Parmesan cheese, tomatoes, and capers (larger ones) beforehand, and stir in the oil. Season with salt, pepper, and herbs. Serve with dessert rings, if desired, and garnish with fresh basil.
