Colorful spaghetti pizza

Ingredients for 4 servings:

  • 400g spaghetti
  • Salt and pepper, white
  • 100 g mushrooms, sliced
  • 3 medium-sized tomatoes, diced
  • 1 small bell pepper(s), yellow, diced
  • 150 g feta cheese, diced
  • 2 medium-sized onions, cut into thin rings
  • 2 garlic cloves, chopped
  • 6 eggs
  • ½ tsp thyme, dried
  • 5 tbsp olive oil
  • 6 tbsp tomatoes, pureed
  • possibly basil, for garnishing

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the pasta until al dente, whisk the eggs, and season with salt and pepper. Heat 1 tablespoon of oil in a large pan. Fry the onions until golden brown, add the garlic, and fry briefly. Add the diced bell peppers and mushrooms, along with the passata, season with salt, pepper, and thyme, and sauté for about 5 minutes, then remove from the pan. Heat 2 tablespoons of oil in each pan. Add half of the spaghetti to each pan. Pour the egg wash over the pasta, then add the diced tomatoes, vegetable and mushroom mixture, and feta cheese. Cover and let stand over low heat for 5-10 minutes. Garnish the spaghetti pizza with the remaining thyme and basil.
