Ingredients for 1 servings:

  • 300 g flour
  • 4 tsp, leveled baking powder
  • 300 g sugar
  • 1 pack of lemon(s), grated peel
  • 3 tbsp lemon juice
  • 4 eggs
  • 150 ml oil
  • 150 ml carbonated mineral water
  • 150 g powdered sugar

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

For the dough, mix the flour with the baking powder and sift it into a bowl, then add the sugar, lemon zest, 1 tablespoon of lemon juice, eggs, oil, and mineral water. Beat everything with a hand mixer on high for 2 minutes until a smooth dough forms. Pour the dough onto a baking sheet lined with baking paper, smooth it out, and place it in the oven. Preheat oven to 180°C (top/bottom heat), or preheat oven to 160°C (fan oven). Bake for about 20 minutes. Then place the cake on a wire rack. Mix the powdered sugar with 2 tablespoons of lemon juice, brush over the cake, and let it cool.
