Cream cheese with pine nuts and basil

Ingredients for 8 servings:

  • 500 g double cream cheese
  • 100 g pine nuts
  • 1 bunch of basil
  • 1 dashes lemon(s)
  • 6 tbsp olive oil, fruity
  • Salt and pepper, freshly ground

Working time approx. 15 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 15 minutes

Simply delicious!

Whisk the double cream cheese with the olive oil. Roast the pine nuts in a pan without fat. Roughly grind (do not grind) 3/4 of the nuts. Finely slice the basil. Fold 3/4 of the basil and the ground pine nuts into the cream cheese, season with fresh lemon juice (not concentrate), salt, and pepper. Let the cheese mixture sit for at least 4 hours. Sprinkle the remaining pine nuts and basil decoratively over the top and serve with white bread. We like to eat it as part of a cheese platter or simply as a dip or spread. This spread also works well as a filling for grilled vegetables, for example, in an antipasti platter. (Serves 8 people as a spread at a barbecue or as a side dish.)
