Creamy leek vegetables

Ingredients for 4 servings:

  • 4 stalk(s) leeks, thick stalks
  • 1 tbsp margarine, heaped
  • 100 ml vegetable stock
  • 200 ml coffee cream, 12% fat
  • 30 g cornstarch
  • 1 tsp, heaped sugar
  • Salt
  • pepper
  • nutmeg
  • 1 shot of milk, if needed

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Trim the leeks, cut into pieces, and wash thoroughly. Drain. Meanwhile, heat the margarine in a saucepan. Sauté the leeks for 5 minutes. Pour in the stock and season with sugar, salt, pepper, and nutmeg. Cover and simmer the vegetables for 15 minutes. Mix the coffee cream and cornstarch well in a shaker. Finally, add the cornstarch and cream mixture to the leeks, stir, and let it thicken. Season again with the spices. If it’s too thick, you can thin it out with a splash of milk.
