Ingredients for 3 servings:
- 8 ladyfingers
- 1 cup of espresso
- 125 g low-fat curd cheese
- 100 g crème fraîche
- 1 tbsp sugar
- 1 packet of vanilla sugar
- 1 pinch(s) cinnamon, optional
- Cocoa, for dusting

Place four ladyfingers in a bowl. Drizzle half of the espresso over the ladyfingers. Mix the quark, crème fraîche, sugar, and vanilla sugar into a cream. If you want a Christmassy twist, you can add a pinch of cinnamon. Spread half of the cream over the sponges. Place the remaining sponges on top of the cream. Drizzle with more espresso. Spread the remaining cream on top. Dust with cocoa. Let it sit briefly, ideally in the refrigerator for about half an hour. Sprinkle more cocoa over the top. Serve with fresh or hot frozen berries, if desired.
